FILLETS OF ANCHOVIES IN EXTRA VIRGIN OLIVE OIL
The anchovy, or anchovies, is a very important ingredient of the Mediterranean diet.
Salted anchovies in particular, which are very rich in natural glutamate, are widely used to flavour many traditional Calabrian recipes: such as pitte chine, zeppole, garlic oil and chilli pepper pasta, and struncatura ammollicata.
Callipo anchovies fillets are already de-boned and therefore very practical, and the preservation in olive oil refines the taste. Prepared entirely by hand in Sicily.
